Millions of people will be enjoying the 2017 Total Solar Eclipse in just over a week, and here in Oregon we are excited to have it pass over the entire state. And while the eclipse happens at around 10am PST here, you can still raise an Eclipse themed cocktail to celebrate the day!

Here are just a few of the many we found on a quick google search:

 Kendra at Simply Darrling combines 4oz Sparkling  Clementine or Orange soda with 1.5oz Dark Rum and  garnishes with an orange slice.
 Pour the soda over ice, then float the rum on top to  mimic the dark shadow of the moon.

 

 

 

 

The NoMad at Liquor.com boasts that this cocktail is “potent and tasty,” combining 1oz Tequila, ¾ oz Cherry Heering, ¾ oz Aperol, ¾ oz lemon juice, and ¼ oz Mezal. 

 

Difford’s Guide—who also has great hangover drink recipes in case you overindulge during the eclipse—mixes up a sultry cocktail with fresh raspberries.
Take 12 fresh raspberries, 2oz Bourbon whiskey, 1oz black raspberry liqeuer, ½ oz fresh lime juice, and 2oz cranberry juice.
Muddle raspberries, add other ingredients, shake with ice, and strain into glass filled with crushed ice. Garnish with raspberries and a mint sprig.

Elizabeth at Frugal Mom Eh! brings us the Galaxy Mocktail, a fun slushy featuring 3oz Blue Curacao syrup, 1.5 oz Grenadine, 4 oz Lemonade, 1.5oz lime syrup, ice, and garnished with an orange slice. Check out the blog post for layering techniques to get the full galaxy effect!

Another great option is this Coconut Lavender Lemonade, with a lovely color that will remind you of the dark skies. Combine 1.5 cups fresh lemon juice, 1.75 cups sugar, 8 cups coconut water, 4 cups water, and Homemade Lavender syrup (recipe link above).
